Squash and Apples

Pumpkins were covered yesterday. Now for the two other foods that instantly make me think of fall:

                    Squash and apples.

                                        Or better yet…

                        squash soup                     and                         apple crisp.

Squash soup:

What You Need 
1 tablespoon olive oil 
2 shallots 
1 pound butternut squash 
1 medium boiling potato 
1 bay leaf 
Kosher salt 
Fresh ground pepper (or white pepper, if you have it) 
Sour cream and fresh dill, to garnish

Apple crisp:

What You Need 
APPLE MIXTURE
 2 Granny Smith apples
 2 McIntosh apples
 1 tsp. lemon juice
 1/4 c. sugar
 2 tbsp. brown sugar
 1 tbsp. all-purpose flour
 1/2 tsp. cinnamon
 dash of sea salt
 dash of nutmeg
 dash of cloves
 dash of ginger
CRISP
 2/3 c. all-purpose flour
 1/2 c. packed brown sugar
 1/2 c. regular oats
 3/4 tsp. cinnamon
 5 tbsp. unsalted butter, diced
 dash of sea salt
